The Red Meal

1 TABLEspoon Olive Oil, (Extra Virgin)
1 head Red Cabbage
2-3 Jars Beets, Whole Pickled
2 Each Red Onion
1/2 - 1 Pound Mushrooms, (Baby Bellos)
2 Pound Ground Beef
1-2 Large Eggs
1 TABLEspoon Bread Crumbs
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
1 TABLEspoon Heinz 57 Sauce
1/4 teaspoon Italian Seasoning
12 Small Red potatoes nuked, and browned
  Mix the meatballs I use a 1.5 oz measuring spoon about 1 sixth of a cup, so you could use a 1/3 sup them smash that out in to two hlaves. Brown the meatballs, they do cook through fairly quickly.
  I like to nuke the potatoes and then pan fry them to brown them up, and also helps the texture.
  Thinly slice the head of red cabbage, using the tablespoon of the EVOO, wilt the cabbage then add the onions and baby bellos, I usually drain and reserve the pickled beets before I add them. You want final mixture to be damp not wet.
