Red Beans and Rice

1/2 Cup Dried Bacon
2 Can #1, (10-16 oz) Red Beans
4 Cup Rice Instant (before making)
2 TABLEspoon Minced Garlic (fresh not dried)
1 teaspoon Fresh ground black pepper
2 teaspoon Salt, Sea
1/2 Cup White Vinegar
1 Large Onion Finely Chopped
1 Can, #2, (20-30 oz) Diced Tomatoes
1 TABLEspoon Wilde's sTOOpid Cold Pepper Paste
0 - 3 Large Fresh Jalapeno Pepper Finely Chopped
  
  Drain the beans and keep liquid
  Remove 1/2 cup of liquid and use it to bloom the bacon
  Rinse the sludge from the can(s) and add to bean juice to equal 3 cups of liquid add vinegar to liquid, add spices and pepper paste, stir.
  Add instant rice, let stand for 20 - 30 minutes, then microwave, covered, on high for five minutes, stir, nuke 4 more minutes.
  Stir rice and verify cooked nuke more if needed
  Stir in beans, bacon, tomatoes, onions, jalepenos, and cooked rice.
