If you have not done this before, the first and perhaps most important step is to figure out how much oil is required a) while bird is still in the wrapper place bird in pan b) add water to cover bird (you meassure water on the way in or the way out) c) remove bird d) if you are measuring the water on the way out then, use a measuring cup to remove the water e) you can also just draw a line on the outside of the pan after removing the bird, but with the water still in the pan Be Very Careful The Oil Can Catch Fire, Turn Off Fire When Inserting Bird! 1) Fold String over twice so it's four thicknesses, make a doubled up loop and put it on one leg, then tightly tie to the other leg. 2) Blender the Itialian Dressing with the sTOOpid Cold for 5 minutes 3) Inject the dressing into the bird's breasts and other edible parts of the bird 4) Using bone cutter scissors, cut off the wings, and set aside, 5) When there is about 20 minutes of cook time remaining, put the wings in to the oil. 6) Put proper amount of Canola Oil in pan 7) Put pan on Cajun Cooker, and light fire, heat oil to 400F degrees, yes, 400F degrees 8) Turn off the fire, use hook to CAREFULLY lower the bird in to the HOT OIL, I wear cooking/welder gloves, Turn Off Fire When Inserting Bird! 9) When the oil temp drops to 350F degrees turn fire back on 10) Start Timer 11) Regulate the fire to maintiain the oil at 350F degrees 12) Cook bird at 350F degrees for 3 and a half minutes per pound 13) Test several spots with the meat thermometer, I recomend at least 175F degrees it will not hurt to go to 180F degrees 14) Turn off the fire, remove bird, Carve, Enjoy 15) If properly cleaned, and kept reasonbly cool (think winter in the garage) the oil can be reused several times Be Very Careful The Oil Can Catch Fire, Turn Off Fire When Inserting Bird! One twenty pound bird should take about Seventy Minutes. One fifteen pound bird should take about FiftyThree Minutes One twelve pound bird should take about FortyTwo Minutes |
